Uncle distillery, this classic dry gin takes inspiration from a traditional London dry recipe, adding a twist with the use of 14 native Australian botanicals, carefully selected to substitute their equivalent in the recipe. All the botanicals are grown on Mt. Uncle farm, with delicate layers of herbs, citrus, berries, and spices bolstering a core of hearty juniper. Bottled up at navy strength, this ought to do well as a base for spirit-forward cocktails, and in a classic G&T.

Nose: Very elegant and precise aromas.

Palate: Zesty lemon peels balance resinous juniper, with piney herbs nestling amongst fragrant spices and crushed almonds.
