Detailed Description
Distilled in late winter of 2006 with two-thirds of the expression made in a double-copper column still with plates removed to achieve a lower distillation proof and the remaining third made in an alembic pot still. One third of this lot was then laid into in American white oak previously used to age California red wine, and the remaining two-thirds was barreled in used dark French Oak. The casks were then rested for the full 11 years at 3,800' elevation in a cool-climate subterranean barrel room, with the upper-most portion of the room opened to allow for soft air circulation in order to create a drier aging environment.

Nose: The nose is chock-a-block full of flavor with notes of molten toffee, roasted agave, mango, oak spice, cola, and butterscotch.
Palate: The palate entry is delicate, with just a hint of sweetness. Warming spices like nutmeg and clove come through along with roasted agave and toasted fruits, with a delicate kick of vanilla.
Finish: The finish is long and fades out with generous sprinkle of pepper on the end.
Distillery Information
Enrique Fonseca's family has been growing agave in Jalisco since the 1880s; each new generation learning how to cultivate the plant in the fertile soils of the Highland region. Today Enrique, from the fourth generation of Fonseca farmers, is the largest private owner of agave in Jalisco. However, while most of his holdings lie near his amazing hacienda near the town of Atotonilco, his distillery is on the complete opposite side of Guadalajara in the town of Tequila -- a three hour drive from where he lives. Purchased from Bacardi in the late 1980s, La Tequileña Distillery isn't the most romantic-looking distillery, but it is one of the best-equipped. With five pot stills and even a large column still (on which he does distill tequila; making him the only producer I know of to use one for quality spirits), Enrique is cranking out high-quality distillates using many strategies that set him apart from other
