The Simonnet-Febvre house has been making wines according to the traditional method since 1840. It is currently the only one in Chablis to produce Crémants de Bourgogne. The history Created in 1840, Maison Simonnet-Febvre is one of the oldest traditional Chablis houses. In 1840, Jean Febvre, a cooper originally from Montbard, bought the Tisserand trading house and then specialized in the production of Chablis Mousseux, the ancestor of what would later become the Crémant de Bourgogne appellation. Married to the daughter of a broker named Forgeot, the company then bears the name of Febvre-Forgeot. The company grew in the 19thcentury under the impetus of 4 successive generations. Mélanie, Jean-Febvre's daughter marries Amédée Simonnet, they develop the company together. In 1894, on the death of Mr. Febvre, the Febvre-Forgeot company changed its name to the benefit of the person who took over the reins and then became Simonnet-Febvre. Their two sons, Georges and Camille, then took over the business and gave it tremendous growth thanks to their progressive vision. Modernization of the facilities, creation of the cellars and the loading dock, installation of electricity and then of the telephone. These developments accompany the growing sales, in France and abroad, of Chablis Sparkling Wines but also of Chablis white wines from the Maison Simonnet-Febvre estate. A Georges will succeed Pierre then Jean-Claude Simonnet.
