      Payment of Carraovejas is origin. This project was born from its first nine hectares, which aspires to turn a dream into a benchmark winery in the Ribera del Duero. The beginning of his career dates back more than three decades, when Pago de Carraovejas was born as a response to the aspiration of José María Ruiz to make a great wine in one of the areas with the most potential at the moment. The story of José María and the world of wine began a few years earlier, in 1971, when he attended the 'First World Sommelier Contest' held in Milan as a Spanish representative. That experience was the seed of his desire to start his own restaurant, along with his own wines. When he was already fully within the world of restaurants since the opening of his already prestigious José María Restaurant in Segovia in 1982, he continued to maintain his determination to launch the project of a small winery in order to offer the best quality wines from his restaurant. This is how the history of Pago de Carraovejas begins, when in 1987 the winery was established in Peñafiel, more specifically on the slopes of Carraovejas. The enclave of these first nine hectares, chosen for being a great historical center of Ribera del Duero wines and one of the areas with the greatest future for wines in Spain due to its location, soils and climate, is the start of a project with more than thirty vintages. The first vintage, in 1991, of the barely 70,000 kilos from the first 25 hectares in production, marks the origin of Pago de Carraovejas.
