On the eyes Intense, deep colour, with light hints of amber and copper. On the nose The first floral notes immediately give way to black cherry and candied fruit peel followed by cocoa, cardamom and smoky aromas. On the palate The wine is beautifully structured and well-balanced in a perfect classic style, the different facets of its personality blended into a coherent whole. The fruit flavours are smooth, with surprising body and sparkle. The initial firmness becomes more rounded and creamier with a subtle sweet and sour note of pink grapefruit.

- Wine Advocate: The 2000 Dom Perignon Rosé is a flashy, ripe Champagne that screams Pinot to a degree I have never encountered in another vintage of this wine. A dark, intense color leads to a Chambolle-like nose followed by endless red berries, flowers and spices, all backed up with plenty of muscle, richness and density. The wine continues to blossom on the palate, with utterly beguiling detail, clarity and polish, all qualities that resonate on the rich, expansive finish. The 2000 Dom Perignon Rose is 45% Chardonnay and 55% Pinot Noir, of which 25% is still Pinot. Geoffroy says his goal was to make a statement with the 2000 Dom Perignon Rose; he has done that and so much more. In fact, the 2000 seems to signal a stylistic shift towards a more important, serious style of rose. This superb wine is not to be missed, but readers should note this is no easygoing rose, rather it is a Champagne that demands serious attention. The 2000 will test the limits of what readers expect from a Dom Perignon Rose, but the wine is simply marvelous. I loved it. This bottle was disgorged in 2008.
- Decanter: As weâve come to expect from DP over the last 10 years or so, this is yet another curve ball. Not that this was immediately obvious when first released. One of the lighter coloured DP rosĂ©s, the Chardonnay and Pinot Noir appeared to be in perfect harmony just 18 months ago, but gradually the Chardonnay has revealed its ripeness while the Pinot Noir has developed a distinctly wild character. Not a greenness as such, but definitely veering more towards Sauvignon Blanc than Pinot, making the 2000 unique and distinctive, supported and softened by a delicate mousse, and bursting with a myriad of orchard and berry fruits. Typical of its creator, Richard Geoffroy, this pink Champagne offers endless possibilities to play with at the table.
Producer Information
Dom Pierre PĂ©rignon, a French Benedictine monk, set out his vision to "create the best wine in the world" when he became Cellar Master at the sacred Abbey of Hautvillers in 1668. Dom PĂ©rignon dedicated over 40 years to this mission, employing a visionary spirit and daring approach to the wine making process. Over that time, he became known as the "father of champagne" for laying down the fundamental rules for the traditional Champagne production method (La Methode Champenoise or Traditionelle). A favored wine of the Sun King Louis XIV, Dom PĂ©rignon himself compared his wine to "drinking stars".
