            Producer Information

            Domaine Charlopin-Parizot (also known as Domaine Philippe Charlopin) is a well-regarded wine estate based in Gevrey-Chambertin, in Burgundy's northern Côte de Nuits subregion. The domaine produces a number of wines across several grand cru holdings in the Côte de Nuits and Côte de Beaune, as well as several Chablis premier cru vineyards. Originally, the domaine covered just 1.5 hectares (4 acres) of cultivated vineyards, although this has grown to a total of 25 hectares (62 acres) today. Charlopin-Parizot's best wines come from plots in the Clos Vougeot, Clos Saint-Denis and Charmes-Chambertin grand cru climats in the Côte de Nuits. It also produces a range of premier cru wines sourced from grapes grown in classified vineyards in Pernand-Vergelesses, Gevrey-Chambertin and Chablis (the latter includes 0.7 hectares/1.7 acres in L'Homme Mort, 0.3 hectares/0.7 acres in Chablis Beauroy and 0.2 hectares/0.5 acres in Cote de Lechet). Village wines from Morey-Saint-Denis, Chambolle-Musigny and Vosne-Romanée, and a Gevrey-Chambertin Vieilles Vignes wine complete the range. Once the grapes are harvested they are given a long pre-fermentation maceration (often called a "cold-soak") period of between four to five days. Following this the grapes are fermented using indigenous yeasts and are then aged in oak casks for up to 18 months. The village-level wines see 50 percent new oak whereas the Gevrey-Chambertin Vieilles Vignes and grand cru wines will see up to 100 percent new oak. No fining is used in the vinification process, but the wines are lightly filtered. The family-owned and run domaine was founded in 1977 by Philippe Charlopin-Parizot. Philippe's son, Yann Charlopin-Parizot, joined the family business in order to take on the management of the white winemaking aspects of the domaine.
