The lime-rich soil of the area suits Chardonnay very well and naturally limits yields to an absolute maximum of 50 hectolitres per hectare, as well as imparting distinctive mineral characters to the wines. The grapes are sourced only from this Premier Cru site. The grapes are hand-harvested and pressed gently. 35% is fermented in small oak barrels as this fuller bodied wine benefits from more oak influence. It spends several months ageing on the yeast lees to add extra complexity.

The Domaine de la Motte is a vineyard owned by the Michaut family from father to son since 1950. The vines are all located in the town of Beines, near Chablis. The Domaine de la Motte vineyard , located on different Kimmeridgian and Portlandian hillsides, has 25 hectares of vines in the appellations: Petit Chablis - Chablis - Chablis 1er Cru Vauligneau and Chablis 1er Cru Beauroy. The development of the different Domaine de la Motte wines is the result of teamwork, with which all the members of the Michaut family are associated. The annual production is around 100,000 bottles depending on the harvest, which are exported all over the world.
