Starting with a base of its superb Signature Dry Gin, the distillers then filled the spirit into casks that previously held Palo Cortado sherry. Palo Cortado is an intriguing variety of sherry, showing off not just the familiar dried fruit sweetness, but also a host of savoury, nutty notes. These notes have made their way into In The Welsh Wind's gin, and it's a fascinating sip.
