Like the sirens of Greek mythology, Sirne will tempt you. With a beautiful, nuanced aroma and flavor, Sirne embodies the rich tradition and history of absinthe. Absinthe has always been a favorite spirit at North Shore Distillery - first as a curiosity on their world travels, then as a fascination. They have tasted many variations and have been working on Their own recipes for years. Now that is possible to actually introduce one to the market, they are excited to share this incredible absinthe with you. North Shore takes a fairly traditional approach to creating Sirne. They use the traditional trinity of absinthe ingredients along with a proprietary blend of additional herbs and spices to create Sirne's richness and complexity. The process requires a significant amount of time, preparation and botanicals, but the result is worth the effort.
North Shore Sirene Absinthe Tasting Notes
Nose: Each sip of this dark green absinthe greets you with an intense aroma of anise, rosemary, and complex herbs.
Palate: On the palate by powerful notes of sweet lemon, wormwood, basil, licorice, pepper, and freshly-cut grass.
Finish: Rich and smooth.
Distillery Information
North Shore Distillery was founded in 2004 by Derek and Sonja Kassebaum, who regard the distilling process as one part science and about nine parts art. The pair are true craft spirits pioneers in that they fled a background of chemical engineering and law respectively to follow their passion in spirits. They have the distinction of being the first craft distillery in the state of Illinois... how they got past all the regulatory and bureaucratic hurdles in that state is a feat in and of itself. North Shore spirits are made in their German-made copper pot still Ethel, which has a distinctive flare for a signature taste. In 2013, to celebrate their success they expanded their distillery to include a tasting room and outdoor summer seating for cocktails. Here at Proof66, we had the opportunity to personally meet the North Shore Distillery team.
