The creators of Edinburgh's first absinthe are trying an approachable take on the notorious green spirit. Attempts to undo its unfair reputation include botanicals picked from an on-site distillery garden, grown using composted organic waste, and exclusive artwork by local illustrator Jack Fletcher.

Nose: Herbal with notes of mint and lavendar as well hints of salt, liquorice fennel, and aniseed.

Palate: A very pleasant, Lovely texture.

Finish: Quite powerful finish.
