Nose: Fresh cooked agave, lime zest, delicate herbal greens, and a faint white pepper edge.

Palate: Crisp roasted agave core, bright citrus (particularly lime and grapefruit), subtle minerality, with an herbal/spicy lift and gentle pepper.

Finish: Clean and refreshing, medium-length; lingering citrus peel, soft vegetal echo, and a hint of spice on the tail.

Distillery Information

Conejo Salvaje (“Wild Rabbit”) sources its agave from the Los Valles area in Jalisco, where volcanic soils and high-altitude conditions contribute to a richer and deeper flavour in the Blue Weber agave. The tequila is produced in small batches using traditional methods—hand-harvesting mature agave, slow cooking, distillation with care to retain agave purity—and then bottled unaged for the Blanco expression. With NOM 1480 as its registered distillery code, the brand positions itself in the premium category, offering collectible bottle design and modern aesthetics while staying rooted in traditional production. Although younger compared to century-old houses, Conejo Salvaje has garnered attention among enthusiasts for its clean expression of agave terroir and its ability to perform both as a sipping blanco and as a high-end cocktail base.
