After the barley has been fermented, the wash is twice distilled through Glenmorangie's copper-pot stills by a team of 16 distillers known as the Sixteen Men of Tain. Glenmorangie's stills are equipped with relatively small boiler pots, which increases the exposure of the whisky to the copper, resulting in a purer flavor. In addition, the stills are nearly seventeen feet tall — the tallest of any distillery in Scotland — and as a result, produce a lighter, more refined whisky. Glenmorangie has several expressions that start their aging in ex-bourbon casks before being finished in more exotic ones. The 12-year-old Malaga Cask Finish is one of these. After its 8 years of initial aging it was transferred to first-fill Spanish Malaga fortified wine casks for an additional 4 years. Malaga is a sweet wine that is made with Pedro Ximenez and Moscatel grape varietals. These casks, chosen by Glenmorangie's Dr. Bill Lumsden, impart the non-chill-filtered whisky with rich dried fruit notes.

Nose: The nose opens with a honey sweetness, mead, toffee, and freshly baked bread, as well as red fruit and a subtle herbal touch.
Palate: It's oily on the palate with sultanas, raisins, dates, honey, brown sugar, citrus, and spice.
Finish: Finishes long and gentle with a touch of nuts and oak.
Distillery Information
The Glenmorangie distillery was established in 1843, on the Dornoch Firth by brothers William and John Matheson. The site originally held a farm distillery under the name Morangie. There is evidence that distillation was carried out at this site during the early 18th century. Production began in November of 1849. During the latter part of the 19th century Glenmorangie began overseas exportation and destinations included Europe and the United States.
