Crafted by Senior Distiller Andrew Walker: “This gin is perfect for anyone who, like me enjoys an aromatic gin flavor. Lightly sweet red berry notes marry beautifully with a hint of vanilla and cassia spice, it’s delicious served with premium tonic and a piece of stone fruit such as a cherry. This gin also has a naturally deep, rich color having been aged for 500 days and nights in a Red Wine Amarone Cask.”

The Red Wine Cask Gin is made to be tasted side by side with the White Wine Cask Gin. Eden Mill encourages you to explore how different casks and aging profiles can affect the flavor profiles in gin. Any flavors that you can taste in one gin that is unique from the other have been imparted by the cask aging process, so this shows how much flavor influence the cask aging process can have

Nose: Light red-berry fruit aromas, with light spice and juniper.

Palate: Hints of raspberry and cassia.

Finish: Light sweet vanilla and oaky character on the finish.

Distillery Information

In 1810 the Eden Estuary was offering its crystal clear waters to the legendary Haig brothers, helping them distill and lay down some of St Andrews' finest whiskies. Before them, this same site hosted the Seggie Brewery, known for their strong connections with local farmers and agricultural workers. In 2012, Eden Mill resurrected this fine brewing and spirits tradition with our own take on Scottish craft brewing and distilling. Eden Mill was Scotland's first single-site brewery and distillery – they benefit from the best of local water sources, regionally grown barley, and a dynamic, international team with some of the best education and experience the world can offer. Our distillers are at the forefront of experimental wood aging and distillation methods to bring out more of the outstanding flavors found in our products. They know their beer, gin and whisky will stand the test of time and do the tradition of St Andrews brewing and distilling proud.
