This expression demonstrates the importance of refill casks, which become increasingly mellow with each fill – fantastic for toning down the oak and achieving a finely tuned balance of complexity. A combination of whisky from mature refills, along with some from first-fill European oak achieves a wonderful depth of rich, sweet fruit and spice.
