      This has the dark fruit and loam edges of a mountain fruit–based wine, with waves of warm cassis and ganache that are expressive and velvety in feel, while menthol, sage and bay leaf notes fill in the background. Grippy yet inviting, with the flavors melding wonderfully through the long finish, where a sense of freshness pervades.

        • Vinous: The 2000 Cabernet Sauvignon Estate is flat out gorgeous. Silky and aromatic, the 2000 impresses with nuance and freshness. It is not a huge or powerful wine, instead what stands out is the wine's total sense of balance. Medium in body and supremely gracious, the 2000 has so much to offer. The cooler growing season yielded more of a mid-weight feeling of structure. Well stored bottles will drink well for another twenty years.

        Philip Togni Vineyard is a small, family-owned Napa Valley wine producer, focused on producing high-quality wine from Cabernet Sauvignon. It is one of the oldest producers of the Spring Mountain District AVA (American Viticultural Area).The wine collection is simple, featuring varietal Cabernet Sauvignon sourced directly from the estate. This wine has strong characteristics of Spring Mountain, quite tannic in its youth but shows its elegance with age. For the impatient, the second label Tanbark Hill is a Cabernet Sauvignon produced from younger vines on the property, and is more approachable in its youth. Additionally, there is a sweet wine in the style of Constantia called Ca' Togni.The Philip Togni Vineyard was planted in 1981 by Philip Togni with his wife Birgitta, on an ideal ten acre (4 hectare) plot, 2000 feet (600 meters) above sea level. Today, Philip Togni is remarkably a self-contained producer, meaning that everything from vineyard management to winemaking, bottling and shipping is completed on site.
