This is a more complex beast, however, aged for 12 years, developing notes of honey, spice and toffee. A bacoo is a Caribbean genie said to live in bottles and with the ability to grant wishes – and be rather mischievous at the same time

Bacoo 12 Year Rum Tasting Notes

Nose: Toasted fig bread, spiced chocolate pistachio toffee, tres leche cake, and creme brulee.

Palate: Same as aromas with notes of sarsaparilla with spumoni gelato, pink peppercorn, hint of bitter bark and roots, and honeyed espazote.

Finish: An interesting, lightly herbal aged rum that will be fun in creative cocktails like an amaro daiquiri.
