The wine exhibits fresh notes of white citrus, lemon verbena, wild thyme, mint and anise. Delicate, precise and with gorgeous mineral tension, this is a superb food wine and its subtle saline tang works brilliantly well with fresh seafood and shellfish.

Cyril Fhal is one of the great winegrowers we have met on our way in search of the best talents. Its vines are located in Latour-de-France, a town that marks the historical border between France and Catalonia, but also the geological border between the Corbières and the foothills of the Pyrenees. The 5 hectares of the estate are spread over gneiss slopes facing north and east. Its heritage of vines is exceptional, the oldest approaching the centenary. All these factors make Cyril's terroir an incubator of freshness, complexity and depth.The watchword at Clos du Rouge Gorge is the revitalization of the soil, with a view to achieving balances that are natural. There is therefore no chemical weeding and the work remains superficial and carried out only with light tools to avoid compaction. In the vineyard, pruning (all carried out by Cyril) is carried out to the millimeter, synthetic treatments are replaced by nettle and horsetail treatments and yields are miniscule. In the cellar, everything is done to accurately express the quality of the grapes and the purity of the terroir. Thus, Cyril works according to an infusion method to avoid any excess over-extraction, then patiently matures his wines and bottles them without filtration or fining.
