Paul Filliatreau turns his convictions into realities. He made family production evolve towards quality, was the driving force and ambassador of the Saumur and Saumur Champigny appellations, and was also involved in the transition to organic farming of the 45 hectares of the estate.When Maurice Filliatreau hands over his 8 hectares of wine estate to his son Paul, the latter is just 24 years old. This is the time when productivity was king. Paul learned a lot from these years and understood that it was necessary to quickly change cultivation methods and is one of the pioneers of organic in this appellation.It is with all his team that he took up the challenge of a culture that is more respectful of the earth and plants. The vines of Château Fouquet , i.e. 11 hectares in red Saumur, cabernet franc grape variety, were grown organically from the start; as well as 2 hectares of Saumur Blanc 100% Chenin. The harvest of the 1998 Château Fouquet cuvée was therefore already certified organic.A demanding culture, certified by the AB organic label which guarantees that there is no chemical treatment during the production process, neither in the vines nor during winemaking. The team that works in the vineyards has learned to observe the soil and the plants, to be attentive. This has changed their relationship to nature, to the profession.
