Made by one of the few female cachaça distillers in Brazil, Katia Espírito, the Avua Prata Cachaca is a crisp and vibrant take on the traditionally sweet and savory cachaca that make it an excellent cocktail spirit. Each batch begins with organic sugar canes harvested from Fazenda da Quinta, a family-owned farm located a few hours north of Rio de Janeiro. After crushing the plants, their juices are then fermented for a full day using wild yeast before being twice distilled in copper pot stills. The resulting distillate is then rested in stainless steel tanks for 6 months before being brought to proof using pure water and bottled.
Avua Prata Cachaca Tasting Notes
Nose: On the nose, this crystal-clear cachaca opens up with an intense aroma of overripe, blackened bananas supported by hints of floral and grassy notes.
Palate: This is complemented by a dry and delicate palate consisting of more bananas and generous helpings of fresh sugar cane juice.
Finish: A fairly lengthy and dry finish of even more bananas, sweet cereals, and gentle spice notes.
