Circumstance Organic #2:23:1:29:37 Single Grain Whisky | 700ML

This is the first organic whisky from Bristol's Circumstance distillery. The whisky is produced from a combo of organic malted, un-malted, and roasted barley, mashed and fermented for 14 days with a selection of saison, Belgian abbey, and strong ale yeast.

Circumstance Organic #2:23:1:29:37 Single Grain Whisky | 700ML Tasting Notes

Nose: Spiced plums, a touch of fruit cake, candied nuts, and roasted malt.

Palate: Ripe, soft stone fruits and runny toffee join milk chocolate and a touch of pepper.

Finish: Oaken vanilla and lemon zest linger alongside butterscotch and oak char.

Distillery Information

"The pair started distilling way back in 2007, making gin in a basement as a hobby, but in 2013 they opened a distillery near Bristol university named Psychopomp. After Pychopomp naturally, came Circumstance in August 2018. It’s a very small outfit, with a 1900-litre stainless pot still which can be connected to two column stills, a four plate and a 12 plate. Alcohol comes off the smaller column at around 70-72% ABV, preserving plenty of character. There are also a couple of tiny 300-litre gin stills which are used to make contract gin."
