Kilchoman Single Bourbon Cask Release (New York Exclusive) Islay Single Malt Scotch Whisky

Kilchoman Islay Single Malt Scotch Whisky is made from Publican barley grown directly on the distillery’s grounds. (Publican barley is more resilient to Islay's harsh weather than traditional strains of barley.) Once the barley has been harvested, it is malted at the distillery's malthouse — Kilchoman is one of just six distilleries in Scotland that continues to malt its own barley — before being dried over a peat flame for ten hours. After the barley has been peated to approximately 20 phenol parts per million, the grains are fermented for three to four days in stainless steel washbacks before being twice distilled through Kilchoman's copper-pot stills. In order to subsidize some of their business early on, Kilchoman sold entire casks to retailers or importers. Luckily they still continue this program. These casks are all unique and are typically released at cask strength. These Kilchoman single barrel releases are highly acclaimed by connoisseurs. Bottled at cask strength this Bourbon, barrel #317, is bottled exclusively for New York retailers.

Nose: On the nose are notes of vanilla, lemons, smoky peat, rich spices, and ash.

Palate: The palate is peppery, with hints of salt, toasted oak, and dark chocolate.

Finish: The finish is smoky, with flavors of dark chocolate, butterscotch, slightly floral notes.

Distillery Information

The Kilchoman distillery (pronounced Kil-ho-man) is a distillery that produces single malt Scotch whisky on Islay, an island of the Inner Hebrides.The distillery is situated on the western side of Islay, near the small settlement of Kilchoman. The location made it the most westerly distillery in Scotland, until the Abhainn Dearg Distillery started distilling on the Isle of Lewis.
