Malting and roasting, milling and mashing, crooking it up slow or low in a hand hand-hammered copper pot still, batch by batch, was just called "making whiskey". Nose: Apple Brandy, Peach, Stone Fruit.

Palate: Caramel, Oak, Anise, Herbal.

Finish: Rye Spice.
