Olivier Horiot is a biodynamic winegrower and producer based in Les Riceys, a village in the Aube region of Champagne. He is known for his natural, terroir-focused wines, including both sparkling Champagnes and still wines like Rosé des Riceys. Horiot's approach emphasizes minimal intervention in the cellar, using native yeasts and often employing a hands-off approach with low or no sulfur additions. He is particularly recognized for his Rosé des Riceys, a still rosé wine made from Pinot Noir, and for exploring the diversity of the region's unique terroirs through parcel-specific vinification.
