Detailed Description

Released in February 2016, this is the first ever Redbreast single cask bottling. Sherry butt No. 30087 yielded just 576 bottles. The sherry butt itself was coopered in late 1996 at the Antonio Paez Lobato Cooperage in Southern Spain near Jerez. The cask was then toasted and seasoned with Oloroso sherry for two years at the Páez Morilla Bodega until early 1999, when it was shipped to the Midleton Distillery in County Cork. Here it was filled with single pot still Irish distillate and laid in warehouse M15A until August 2015 – 16 years and 147 days later. Redbreast Single Cask #30087 was bottled without chill-filtration after being selected by Billy Leighton, Head Blender at the Midleton Distillery, and The Whisky Exchange team from a choice of two Redbreast single barrel samples in March 2015.

Redbreast 1999 Sherry Cask Single Pot Still Irish Whiskey Tasting Notes

Nose: Blackened fruit cake, matchbox lighting strip, coal dust, burnt raisins, prunes and dates with faint crushed mint and cracked black pepper. Water reveals old leather, espresso, brasil nuts and peacan pie.

Palate: Full-bodied. Sulphury matchbox lighting strip and black pepper spice with black strap molasses, vanilla, coal dust and sweet liquorice. Sweeter and altogether better balanced with a splash of water which also releases blackcurrant jam.

Finish: Dry, charcoal, burnt raisin and liquorice with faint tobacco leaf (especially with water).
