Detailed Description

Charbay Release III Hop Flavored Whiskey is the third release in Charbay's Lifetime Collector Series. The whiskey was crafted from European two-row barley, which was grown and malted in British Columbia (the barley used has more concentrated flavors than mainstream 6-row barley). After the barley was malted, it was brewed into a pilsner. Following the brewing process, Karakasevic distilled 20,000 gallons of the pilsner into 1,000 gallons of whiskey through his classic, alambic charentais pot-still (one of only five in the United States). The distillation process alone took 3.5 weeks. Then, the whiskey was aged for six years in new, American oak casks with a #3 char. Typically, the degree of charring within a cask is measured on a scale of one to four, with a #1 char referring to casks that have been slightly toasted, and a #4 char referring to casks that have been charred so heavily that the interior resembles an alligator hide (the latter are nicknamed alligator-charred casks). The #3 char used to mature Release III contributed notes of honeyed oak, cloves, cinnamon and warming spices to the whiskey.

Nose: Notes of caramel and vanilla.

Palate: Hints of maple syrup, cinnamon, leather and tobacco.

Finish: Finish is full and lush, and lingers just enough.

Distillery Information

Each winter, Marko Karakasevic, master distiller at Charbay Distillery, travels to Central California and selects organically grown, tree-ripened blood oranges at their peak maturity. The oranges are delivered to his distillery in St. Helena, California within three days and crushed — skins and all — by Marko (a 13th generation master distiller!) and his team. Distilled in a double copper alembic charentais pot to 192 proof, Clear Vodka is gently, gently filtered and bottled by hand.
