      An austere touch marks the grandeur of the terroir in this masterfully balanced white, between the very dynamic concentration of the fruit and a traceable touch of phenomenal salinity, which we rarely encounter. It will last through the decades.

                                                                                                                        At the end of 1980, Éric Nicolas savored wine literature, among others "My men of wine" by Fiona Beeston from Clos des Capucins, in Chinon. He began studying oenology in Montpellier and experimented with his first winemaking at Château de Pibarnon in 1989. Conquered by the wines of Sarthe , the couple of new winegrowers Éric and Christine Nicolas founded the D omaine de Bellivière in 1995, with 5.5 hectares of vines in Coteaux-du-Loir. They are offering their first vintage to Caves Legrand , with whom they are establishing a long-term partnership. Éric and Christine Nicolas were quickly put in contact with several families wishing to part with their land. Thus, in 1996, they acquired several plots and wastelands in the Jasnières appellation . In 2002, the Bellivière estate totaled a dozen hectares of vines. In 2015, their son Clément vinified his first vintage with his parents. A trading activity was created in 2016, "to deal with the first frost events", where we buy organic and biodynamic grapes . Éric and Christine Nicolas were the first, in the mid-1990s, to rekindle the extinguished flame of Sarthe wines. With the same sensitivity and rigor, their son Clément joined the family estate. Their vintages show the immense potential of these discreet terroirs. The reasons for success are the same as everywhere else in France: elitist viticulture, biodynamic, and winemaking that is as natural as possible but scrupulous. The Coteaux-du-Loir Vieilles Vignes Éparses perfectly illustrates the unique, elegantly austere character of these wines which evolve towards an extraordinary saline sensation with a few years in bottle. Calligramme, from 70-year-old vines, is another monument, oscillating between dry and semi-dry depending on the vintage, that every lover of great white wine from the Loire must have in their cellar. With their high level of concentration, the reds of Pineau d'Aunis are among the most accomplished of this grape variety, although with a difference this year.
