Detailed Description

Cadee Deceptivus Bourbon begins life as a more traditional bourbon aging for an unspecified period of time in American Oak (we guess less than 2 years so quite young). It is then finished in Portuguese port barrels, an uncommon practice but more often seen in the scotch whisky world than the bourbon world. The producer notes that the barrels are 20yr port barrels, suggesting a strong port wine flavor.

Nose: The nose is interesting with notes of smoked sea salt, corn, faint burnt dill, and wet oak.

Palate: The first sip was thin and had no burn. Notes of allspice and stale cinnamon were most prominent. The second sip had a concentrated warmth in the top back palate. Notes of rich dark fruit, caramel, vanilla, honey, and young oak were present. The third sip was nutty and tasted like mesquite wood.

Finish: The finish was medium with notes of cinnamon, brine, caramel, and cherry.

Cadée Distillery was created by Colin Campbell, a Scotsman from a Clan spanning centuries of distilling and blending history, now transplanted in the Pacific Northwest. Colin was enchanted by the alchemy of spirits at an early age with his first dram in the Laphroig Distillery in Scotland. In 2013, Colin wanted to do things differently to bring the joys of incredible quality creations to the spirits world, resulting in unique, award-winning Premium American Spirits. To do this, he set out to create a different kind of American spirits company based on the long lost model of the classic Scotch Distillery and Blending houses of the 16th century.
