Detailed Description

It is a traditional American spirit. George Washington made it in his distillery, and it was common in the New World before the rise of bourbon after the Whiskey Rebellion. Our unaged White Rye is perfect when sipped neat but also excellent over ice or in classic and contemporary cocktails. Barely touching the barrel before being bottled, this is the true essence of rye without being overshadowed by oak.

Koval White Rye Whiskey Tasting Notes

Nose: Very, very stingy at first, fermented stuff. Gets smoother with time but still, nose is the weakest part. Very much like gin, juniper berries are all over the place!

Palate: First it’s gin, after some chewing, the rye comes forward. Grains come up while it rests in the glass. Water and time brings out salt and pepper, like sipping the edge of a Mojito glass. And the rye comes in a much better mode, fresher and grainy and sweeter!

Finish: Feel of gin and juniper berries rise up strongly. Feel of spirit is strong. Water smoothens too much but makes the aftertaste more fresh, yet dry.

Established in 2008, KOVAL produces organic whiskey, liqueurs and specialty spirits in Chicago's first distillery since the mid-1800s. Founders Robert and Sonat Birnecker, chose to leave their academic careers to bring the distilling traditions of Robert’s Austrian family to America. In making this decision, they vowed to make organic spirits from scratch (avoiding the common industry practice of purchasing and bottling pre-made spirits) and to change the way people understand whiskey by creating a new, signature style - using only the “heart” cut of the distillate - affording a brighter, cleaner take on whiskey.
