Detailed Description

Ten-year-old Highland single malt Scotch, bottled up by the Stirling Distillery for its Sons of Scotland series. Named after the long lost Cashly Distillery in Stirlingshire, this expression spent its years resting in a single hogshead cask between 2011 and 2021, which finally yielded an outturn of 275 bottles.

The Cashly (Sons of Scotland) (Second Release) | 700ML Tasting Notes

Nose: Burnt embers and smouldering woodfire, spiced, baked goods, and distant cooked orchard fruits.

Palate: Hefty peat smoke and chocolatey malt mingle, with gingersnap biscuits and just a touch of treacle, before peppery heat joins.

Finish: Warming layers of ashen oak and earthy peat linger, alongside crackles of candied ginger and smoked almonds.

Distillery Information

Few distilleries have seen such radically different histories pass through its doors and we celebrate these factors every day. The Victorian structure that now houses Stirling Distillery was established in 1888 but there is evidence to suggest that the site was in use as early as the 1500s. Through some historical sluicing we have deduced that the castle housed its horses, stables and stable workers on Lower Castlehill during the reign of King James V. James ruled Scotland from 1512 to 1542 and was known to travel the country disguised as a common man, earning him the nickname “King of the Commons”.
