This blend, primarily composed of Grenache with a touch of Mourvèdre and Syrah, undergoes a gentle extraction process, resulting in a wine that is surprisingly lighter yet undeniably powerful. It presents black fruits intertwined with hints of sweet spice and layers of herbal notes. A pure expression of this appellation.

Producer Information

Domaine Elodie Jaume was created in 2017, resulting from a division of the family property. Boldness and the desire to sign her own wines prompted Elodie, a young winegrower, to cultivate 5 hectares of family plots. Organic farming and Biodynamic practices come to her as obvious to express the identity of these great terroirs. On the northern slopes of the Cabrières plateau, its old Grenaches and its 70-year-old Mourvèdres sink deep into a clayey-sandy soil with rolled pebbles. These two great Rhone grape varieties express all their purity, finesse and freshness. Herbal teas and biodynamic preparations are applied to the letter, plot by plot. These strengthen the life and vitality of the soil and plants. From the outset, she made the choice, in order to better understand the intrinsic identity of each of her 8 plots, to separate the grapes in small vats. Very quickly, Elodie decides to vinify as naturally as possible. No wine input is used. Aging in concrete vats gives the wines a fine tannic structure, gluttony and freshness. The year 2021 sees the arrival of the third vintage of its vinified without sulfur "To lose the sulfur" vintage. A red Châteauneuf-du-Pape cuvée in the same line of conduct is being developed.
