      Opaque black crimson colour with black crimson hue. Perfumed nose of violets, cassis and blackcurrant, showing strong varietal character. The palate reveals flavours of blackcurrant, spice and liquorice, followed by a hint of dark chocolate and mocha. Fine grained tannins. Peppery back palate, with just a touch of mint emerging. Aftertaste of dark chocolate, mint and mocha with spiciness persisting.

        Chapel Hill Winery is a wine producer located in South Australia's McLaren Vale. It was established in 1973 by Tom Nelson and takes its name from a historic ironstone chapel built in 1865. Chapel Hill has two vineyards – the winery and Kangarilla sites, and produces a range of wines mainly based on Shiraz and Cabernet Sauvignon. The Winery Vineyard was planted in 1977 and is marked by its high elevation, ancient rock soils and coastal influence. The 14 hectares (35 acres) of vines planted here are used in Chapel Hill's 'The Chosen' range that includes wines made of Shiraz, Cabernet Sauvignon, Chardonnay and Mourvèdre. Kangarilla Vineyard was planted in 1995 and covers 27 hectares (67 acres) in the foothills of the Mount Lofty Ranges. It is planted to Chardonnay, Verdelho, Sangiovese and Shiraz. The winery also works with growers around the McLaren Vale region to complement the estate fruit, selecting vineyard blocks based on location and soil makeup. The Vicar Shiraz, one of Chapel Hill's top wines, is produced from Shiraz grown from various vineyard parcels that are harvested and fermented seperately. The wine spends 20 months maturing in barrel before being bottled unfined and unfiltered.
