Aromas of very ripe white and yellow fruits. An aromatic complexity and a beautiful minerality. Nice length in the mouth. Great wine to forget in the cellar.

Romain and Damien Bouchard are the brothers behind the refoundation of the Domaine de l'Enclos. They worked very early on in the domain of their parents and know Chablis deep within themselves. A few years ago, Romain was able to take over the Domaine de la Grande Chaume, which he converted to organic farming. They united this domain with that of their parents to create the Enclosure. Here too, bio-organic cultivation is the focus, supplemented since 2017 by biodynamic methods. They work with great effort in the vineyards, which include some of the fillet pieces of famous crus, such as Fourchaume, Blanchot or Les Clos. In the cellar, the two men bet on a mixture of stainless steel and used wooden barrels. This gives Chardonnays the perfect balance of freshness, power and clarity, but also structure and elegant opulence. The result is incredibly easy-to-drink Chablis.
