The finish is mineral, complex, and long. This wine matches well with lamb shoulder marinated with rosemary, thyme, and hibiscus.

      Flam Winery is known as an innovator in the world of kosher wines. Made in the finest wine regions of Israel, Flam wines come from a wide variety of soil types, micro-climates and seasonal conditions to create unique blends and flavors. With vineyards located in the Upper Galilee and the Judean Hills, Flam Winery has the ability to source a number of grape breeds from unique terroirs in order to produce these bold and intense wines. Flam Winery was founded in 1998 just outside Beit Shemesh and became kosher in 2010. The family-owned and -operated winery was founded by the Flam brothers—Golan and Gilad. Golan, who was educated in Israel and Italy and apprenticed in wineries in both Tuscany and Australia, acts as winemaker. Gilad manages business development and strategy. Their mother, Kami, manages the winery, and their sister, Gefen, is in charge of customer relations and marketing. The patriarch of the Flam family winery is Yisrael Flam, who specializes in wine consulting and is a major player in the history of Israeli wine making. He trained at UC Davis’ acclaimed Department of Oenology and Viticulture and became the chief winemaker at Carmel in 1995. He held that position until his retirement, after which he joined his sons in their winemaking endeavors. The winery produces the magic number of 100,000 bottles annually and the wine shows a wonderful mix of old-world versus new-world style and structure.
