We recommend that you enjoy this special spirit neat, due to its many layers of complexity, next to a warm fire as the snow piles up on the window sill. It also pairs beautifully with fig cookies!
High West A Midwinter Nights Dram Act 3 Scene 2 Tasting Notes
Nose: Damp, musty firewood left outside after a cold rain, fresh dill, vanilla icing, orange peel, brown sugar, dried fruit, & nutmeg. Really full aroma that gets your mouth salivating.
Palate: White pepper with burst of creme brulee right off the bat. Then baked apple tart, toasted almonds and a mix between dill, baking spices, and stewed fruits. It has a pleasant mouth-coating feel to it, spreading liquid spice all over.
Finish: Long and warming with loads of peppery spice fading into baking spices. Rests on a nice clove note.
Distillery Information
High West Distillery was founded in 2006 by David Perkins and his wife, Jane. David, a former biochemist, was inspired to open his own distillery after seeing the parallels between the fermentation and distilling process and his own work in biochemistry during a trip to the Maker’s Mark Distillery in Loretto, Kentucky. In 2004, David and his family relocated to Park City, Utah to begin their new venture, where they began distilling in 2007. They chose Park City because of David’s love of the Old West and Utah’s little-known whiskey history
