Winemaker Michel Chauvet is one of the last true artisans in Champagne who chooses to craft his wines exclusively by hand, the way Champagne was made in the early 1900s before machines replaced manual labor. With just 12 acres of grand cru vines in Cramant, the domaine is one of the smallest in Champagne, yet this is a boon for a grower as dedicated to quality as is Chauvet. From harvesting to riddling to bottling, a physical, hands-on connection to the craft of Champagne—not impersonal technology—is the rule at Lancelot-Royer. Recent news at the estate is positive: Michel’s son, Edouart, has decided to join his father in Cramant to assist in crafting the family’s small-batch wines.
