Deep dark color with saturated ruby color and vermillion nuance, 2012 Les Pavots reveals a deep bouquet of Cacao powder, fudge cookies, black cherry, blueberry and blackberry, licorice, with nuances of cedar, cigar box, black tea, graphite, vanilla, a stylish ‘garrigue' touch and black truffle. Extremely full-bodied, the wine offers the same rich, ripe fruit impressions on the palate. The mouth feel is dense and round, with elegant tannins, which lead to a long finish.

• Wine Advocate: The 2012s made from Bordeaux varietals include their flagship wine, the 2012 Proprietary Red Les Pavots, a sensational blend of 64% Cabernet Sauvignon, 20% Cabernet Franc, 11% Merlot and 5% Petit Verdot. A prodigious effort, it rivals some of the fabulous past vintages such as 1997, 2001, 2002 and 2007. The inky/purple-colored 2012 boasts classic notes of crème de cassis, roasted coffee, vanilla bean, cedar, forest floor and blueberries. Full-bodied and complex with sweet tannin as well as hints of charcoal and camphor, this opulent, multi-leveled, Bordeaux-styled 2012 can be drunk now or cellared for 25-30+ years.

• James Suckling: This has great density with a firm and silky texture that caresses your palate, giving layers of mouthfeel. It shows so much, yet has subtle grilled meat, black truffles and dark fruits. Sous bois gives a mushroom and cedar character. Long finish.

In 1982 Sir Peter and Lady Margaret Michael built the Peter Michael Winery on a square mile of rocky volcanic ridges that form the western face of Mount St. Helena in Knights Valley, Sonoma County, California. The estate vineyards rest on steep hillsides ranging in elevation from 1100 to nearly 2000 feet. Of the nearly 600 estate acres, only about 20% are planted to grapes. Peter Michael Winery is best known for single-vineyard and estate grown Sauvignon Blanc, Chardonnay, Pinot Noir and a Cabernet Sauvignon cuvee of Cabernet Sauvignon, Merlot and Cabernet Franc. The Peter Michael Winery remains true to its commitment to growing classic grape varieties in small mountain vineyards in order to produce great wines using classical winemaking techniques. Given this covenant to the product, only a limited quantity will ever be available.
