The Domaine du Granit is located 6o kilometers from Lyon, it represents a vineyard of 12 hectares, 9.5 of which are planted in AOC Windmill, o, 85 hectares in AOC Chénas, o, 65 hectares in AOC Fleurie, 0.30 in Saint Amour, 0.20 Beaujolais villages white and o, 5o hectares AOC Beaujolais rosé; spread over 40 plots. The harvest is totally manual. The pickers make a first selection on the vine, then the grapes are removed on the table until the grapes are of high quality. In cuvage, the harvest is destemmed from 50% to 100%. It then sinks between 10 days and 3 weeks. Fermentations are started with natural or starter yeasts.
