Didier Herbert, a passionate winegrower, is the third generation to pursue the development of his own Champagne. He has successfully modernised the production facilities. The Champagne Didier Herbert brand currently sells 70,000 bottles. The vineyard : Today our vineyard covers 7 hectares of vines. The vineyards of Rilly, Trois-Puits and Ludes are our 1ers Crus and represent 5 hectares. Mailly Champagne and Verzenay are our Grand Crus and total 2 hectares. Sustainable viticulture: There is no good champagne if there are no good grapes. We have a very specific approach to working the vines. Pruning is one example, limiting the number of grapes on the vine in order to obtain a concentration of sugars and aromas. We also work against the use of insecticides thanks to sexual confusion "collective biotechnological fight against grape worms". Absence of residues on the grapes and therefore in the wine, respect for the environment, enhancement of the image of our vineyard: That is our policy.
