It is made using traditional methods passed down through generations, resulting in a unique and authentic flavor. The agave used in this mezcal is the rare Karwinski variety, also known as Cenizo, which is only found in certain areas of Oaxaca. The agave is harvested at peak maturity and roasted in an underground pit oven, giving the mezcal a smoky and earthy flavor.
