An Old Tom that's been sweetened with delicious Canadian icewine rather than sugar! Icewine really is one of the best things. It's made with grapes that are frozen on the vine and then pressed whilst still frozen - this leaves the water behind as ice whilst a rich, sweet juice is collected to produce this awesome decadent dessert wine. Here That Boutique-y Gin Company have combined icewine with a quality pot still gin made with botanicals such as juniper, lemon and lime peels, and liquorice. Like any great Old Tom, it still works a mean Tom Collins too! Batch 1 is a release of 275 bottles.
Icewine Old Tom (That Boutique-y Company) Gin | 500ML Tasting Notes
Nose: Instantly rich and unlike other sweetened gins. The juniper is still there with lemon zest and curd alongside honeysuckle, tinned peaches and treacle tart.
Palate: Thick, honeyed and rich with hints of lime. Huge and decadent.
Finish: Long with notes of lychee and marmalade.
