Secret Highland 11 Year Old 2011 - North Star Spirits | 700ML

Hailing from an undisclosed distillery, this one matured for 11 years in a selection of Port octaves, oloroso sherry octaves, and a refill hogshead. Vatted and bottled in 2022, a total of 265 bottles now join North Star's Cask Series 21.

Secret Highland 11 Year Old 2011 - North Star Spirits | 700ML Tasting Notes

Nose: Cooked orchard fruits, Black Forest gateaux, vanilla wafers, and a touch of dried hay.

Palate: The baked goods carry through with drizzles of icing sugar, vanilla custard, and buttercream, balanced by rich oak and dense baking spice.

Finish: A solid backbone of oily barley, dark berries, and leathery oak builds beneath.

Back in 2016, Iain Croucher took the dive into the whisky world and started up North Star Spirits. Based up in Glasgow, North Star Spirits specialises in independent bottlings of Scotch whisky, from single malts produced at top distilleries to blended malts and blends (most of which have astronomy-themed names, since… Well, y'know, North Star and all that).
