- Adrian van Velsen: Medium Yellow. The nose is perfumed, there's that flint note again, plus citrus tones and puff pastries. The wine is powerful and rich on the palate, the 14% pushes through here, but there is a wonderful creaminess, the acidity fits, the wine has length, spiciness and definitely shows the typicality of the variety. Do not serve too warm.

A relatively new winery on the Santorini scene (opened in 2016), Vassaltis Vineyards is modern and laid back, with views of the water – but not the caldera. It is owned by the family that owns the luxury boutique hotel, The Vasilicos, in Imerovigli. Open daily from April to October, Vassaltis specializes in the indigenous white grape varieties of assyrtiko, aidani, arthiri; and the red grapes of mavrotragano and mandilaria. There is a range of tasting options, depending on whether you prefer a food pairing or a winery tour. Daily tours are led at 3pm. Reservations are highly recommended, but drop-ins will be accommodated; email or phone ahead to book. There is a great restaurant on site, serving excellent seafood, vegetarian, and meat options, as well as traditional Greek menu items. Private car or taxi is the recommended way to arrive at Vassaltis Vineyards, as there are few buses that travel through Vourvoulos per day. Parking is available on site.
