5 Sentidos Pechuga de Papalote is distilled by maestro mezcalero Delfino Tobón Mejía in the mountain valley of San Pablo Ameyaltepec. This Pechuga uses a once-distilled batch of wild harvested Papalote (A.Potatorum) as the base spirit. For the second distillation Delfino adds raw chicken, green apple, plátano macho, star anise, fennel, cinnamon, chocolate, and almonds, among other ingredients, to the boiling chamber of his custom-made three-plate stainless steel & copper still. This mezcal has aromas of anise and cinnamon. The palate has strong notes of baking spices and green apple.
