Daftmill 2007 Winter Batch Lowland Single Malt Scotch Whisky

The 2007 Winter Release of Daftmill single malt, matured in seven first-fill ex-bourbon casks before being bottled in 2019. Aromas of freshly-baked Victoria sponge, cardamom and peach open on the nose, followed by floral heather and gorse. The palate offers notes of fresh vanilla, ripe peaches, toasted almonds and tangerine, building into an array of baking spices and banana that linger in the finish.

Nose: Sultana, candied ginger, greengages, cedar and some autumnal leaf earthiness.

Palate: Honey and peanut butter on brown bread, with hints of apricot and pear giving it some fruity lightness. A few hints of chicory and peppery oak.

Finish: Custard Cream biscuits with milky tea, plus cut grass and lemon peels.

Daftmill is one of Scotland’s newest and smallest malt whisky distilleries, based in Fife, a region along the east coast north of Edinburgh.
