Barrel #3580 showcases a rich dessert-driven profile built around caramelized sugar, vanilla custard, toasted oak, and baking spice. It uses Pinhook’s high-rye bourbon mash bill of 75% corn, 20.5% rye, and 4.5% malted barley.

Nose: Rich vanilla custard, caramelized brown sugar, butterscotch, toasted oak, warm baking spices, and hints of dark chocolate.

Palate: Creamy and rich with crème brûlée, burnt sugar, toffee, candied pecan, brandied cherry, cinnamon, and mature oak, with a lively rye spice underneath.

Finish: Long and warming, with lingering vanilla, caramelized sugar, polished oak, cinnamon, and gentle spice.

Distillery Information

Pinhook Bourbon takes a vintage-inspired approach to whiskey, releasing different expressions each year rather than attempting to reproduce an identical flavor profile. Its Vertical Series follows a group of 1,350 MGP bourbon barrels with similar fill dates and the same mash bill as they mature from four through sixteen years. Pinhook sources the bourbon from MGP and ages it at Castle & Key, with the Vertical Series bottled unfiltered at high proof. The program is designed to demonstrate how the character of the same underlying whiskey evolves with additional years in oak.
