Togouchi Ayumi is a Japanese blended whisky originally released as a travel-retail exclusive. The blend combines Japanese grain and malt whisky, initially matured in bourbon barrels inside an old railway tunnel before receiving a several-month finish in casks that previously held sake. This unusual maturation approach brings together sweet bourbon-cask character with delicate Japanese sake influence.

Nose: Vanilla, honeyed malt, orchard fruit, soft citrus, gentle oak, and subtle sake sweetness.

Palate: Creamy malt, vanilla, pear, baked apple, caramel, citrus, and delicate floral notes.

Finish: Medium-length, with vanilla, sweet malt, light oak, orchard fruit, and a gentle sake-influenced dryness.

Distillery Information

Chugoku Jozo is a Japanese spirits producer based in Hiroshima Prefecture and is responsible for the Togouchi whisky range. The company is particularly known for maturing whisky in a 361-metre railway tunnel, where the cool and stable environment provides an alternative to conventional warehouses. The Togouchi range combines imported malt and grain whiskies with Japanese maturation, blending, and bottling techniques.
