Este Bourbon con alto contenido de centeno de Kentucky se envejece durante unos 6 años en barricas muy carbonizadas y se embotella a 100 grados. Se lanza en pequeños lotes en sólo un puñado de estados y tiene un carácter "duro como el cuero, suave como el terciopelo".

Boca: Lúpulo, vainilla, café.

Final: Largo, seco y lupulado.

Goodnight Bourbon se elabora con las mejores ofertas de malta de maíz, centeno y cebada. Se utiliza agua pura directamente del río Kentucky para cocinar los granos durante las etapas de maceración y malteado. Es la malta la que convierte el almidón de los granos en esos gloriosos azúcares necesarios para la destilación.
