Their Laws San Luis Valley Straight Rye is born at 7,400 feet above sea level in Colorado’s San Luis Valley on the Cody Family farm which has been cultivating this low yield, semi-wild rye grain since the 1930's. Using their traditional, labor intensive distilling technique we bring this grain's unique, individual character to life while their open-air, on-grain sour mash process adds the soulful complexity that is a hallmark of all their whiskey. Aged for a minimum of three years in their rarified thin air, this rye is luxurious in texture and generous in perfume. In their pursuit of terroir-driven, unapologetic whiskey, we found this individual barrel to be definitive of what originally drew us to this semi-wild rye and have preserved that richness by bottling this single barrel expression at its natural cask strength.

Laws Whiskey House San Luis Valley Cask Strength Straight Rye Whiskey Tasting Notes

Nose: The nose reveals a wonderful balance of dried fruit and baking spices along with complex wood notes.

Palate: The palate is relatively mild for a 100% rye, but there is still plenty of cinnamon, clove, pepper, toffee, book-leather, and fresh-cut oak.

Finish: The finish is medium length with more spice and a thick texture.

Distillery Information

Laws Whiskey House is an award wining grain-to-glass American distillery that applies a “There Are No Shortcuts” philosophy to each batch of whiskey that we create. Located in the Platte Park neighborhood of Denver, CO since 2011, every whiskey batch is milled, cooked, fermented, distilled and aged on-site, utilizing heirloom American Mother Grains from family-owned Colorado farms. The practice of open-air, on-grain fermentation captures the essence of Colorado’s terroir while the custome Vendome copper pot-column still produces a robust, unapologetic grain-forward American whiskey.
