Derrumbes San Luis Potosí es un ejemplo de un estilo muy particular de mezcal elaborado en la gran altitud del Altiplano Central Mexicano, en el estado de San Luis Potosí. Este mezcal se elabora con el agave silvestre Salmiana de la región, lo que le otorga un sabor único y vibrante. Ciertas botellas enumeran al agave Crassispina como subespecie. A pesar de su abundancia, este tipo de agave tiene un rendimiento muy bajo. El mezcalero necesita hasta cuatro veces más para crear la misma cantidad de licor en comparación con el agave azul que se usa en la región del tequila. Cultivado en suelos calcáreos, este mezcal muestra magníficamente las características de su terruño, con notas calcáreas muy evidentes en el perfil de sabor. Producido en una antigua hacienda tradicional, se utilizan hornos elevados conocidos como hornos para cocinar el agave, lo que significa que su mezcal no produce humo.
