Penumbra Mezcal

A single-palenque Espadín mezcal crafted in Santa Ana del Río, Oaxaca, with an emphasis on refined, controlled smoke rather than overwhelming peat or char. The agave is tahona-crushed, pit-roasted with local Encino wood, and distilled over an open-wood flame. Bright roasted agave, melon, citrus, peppercorn, salinity, and subtle white chocolate give the spirit a layered and expressive character.

Penumbra Mezcal Tasting Notes

Nose: Roasted agave, grilled honeydew, grapefruit zest, peppercorn, subtle honey, and elegant wood smoke.

Palate: Bright cooked agave with juicy melon, grapefruit, white chocolate, roasted pepper, mineral salinity, and balanced smoke.

Finish: Clean and mineral-driven, with lingering roasted agave, pepper, gentle salinity, and refined smoke.

Distillery Information

Penumbra is a new mezcal created by Chip Tate, Master Distiller of Innovation at Foley Family Wines & Spirits. The spirit is produced at a single palenque in Santa Ana del Río, in the foothills of Oaxaca's Sierra Juárez. Tate, known for his work with Balcones and other smoke-driven whiskies, brought his experience with wood and smoke to traditional Oaxacan mezcal production. The result is a spirit built around carefully controlled roasting, precise distillation cuts, and a more restrained expression of mezcal's characteristic smoke.
